A note from our cooks

This recipe will take 35 mins. A lentil dal is a healthy and sustaining dish. You can ring the changes with whatever veg you have. Here, we’re using spinach and delicate shiitake. We’re frying off a few seeds to top the lot; known as a tarka, it adds a little extra flavour bomb, along with mint and chilli.
