A note from our cooks

The combination of chilli, pine nuts, lemon and currants is found in traditional Sicilian cuisine – the influence of trade across the Mediterranean from the East. It gives a sweet-sour flavour. We’re using roasted romanesco, a cousin of the cauliflower (romanesco wasn't ready to harvest when we took the pic, which shows cauliflower).
