A note from our cooks

This recipe will take 35 mins. Za’atar is a Middle-Eastern herb and spice mix which marries beautifully with our sweet and nutty Romanesco cauliflower, the first of the short season, so make the most of it. The Romanesco is cut into thick slices and roasted in the spices, then served with a couscous and spinach salad, plenty of fresh herbs and a tahini dressing.
