A note from our cooks

This recipe will take 30 mins. A spiced Indian-style mashed potato is a different side to serve with this quick-cook mushroom curry. The very mild korma-like coconut sauce is aromatic but not at all hot: the heat is in the mash - add the chilli to your own taste.
