There are essentially two very different types of turnip – summer and winter – and they need different treatments in the kitchen. The frost-hardy winter turnip is sown in mid to late summer for use throughout the winter months. It is slower growing and very similar to swede (in fact, in Scotland both swedes and turnips are known as neeps). Summer turnips are very sweet and succulent.
