Nutritious, versatile and easy to cook, quinoa is a true store cupboard staple. This organic wholegrain quinoa, grown in Suffolk, is something special. British quinoa pioneer Peter Fair started growing it in the 1980s, and has worked with Hodmedod’s to find the tastiest types for their growers. They settled on the Fairking variety; wonderfully light and nutty, it’s a very deserving Delicious award winner.

Nick Saltmarsh, Josiah Meldrum and William Hudson founded Hodmedod’s in 2012 to supply beans, peas, grains and seeds from British farms. They started out with a trial project called Great British Beans, distributing homegrown fava beans to community groups and local shops to assess the interest in indigenous pulses. Feedback on the beans was so good that Hodmedod’s was born. Wondering about the name? ‘hodmedod’ is an old East Anglian word for snails, ammonites, hedgehogs, or the curls in a girl’s hair… Anything round and curled up; even conceivably, the team thought, beans and peas! In 2017, they won Best Food Producer at the BBC Food & Farming Awards.

How to prepare

Rinse, cover with 1½-2 parts water or stock for every 1 part quinoa, bring to the boil, then simmer on a very low heat for 15 mins. The grains will absorb the water and swell to 2-3 times their original size. Fluff the grains apart with a fork.

Storage

Store in a cool, dry place out of direct sunlight. Cooked quinoa should be stored in the fridge and eaten within a few days.
