Classic, cool climate Sauvignon Blanc, from the Loire Valley, just down river from Pouilly Fume and Sancerre. Far more food friendly than most warmer climate Sauvignons (Marlborough and Chile for example) Discrete herbaceous flavours and pleasant minerality make it a good match for oysters and shellfish, simple fish dishes (Dover sole for example), smoked salmon (particularly if it’s not too overpoweringly smoky) as well as the traditional fresh goat’s cheese salad. It also works well with, and has enough acidity to work with air dried ham.

Château Gaillard is located on the Northern slopes of the Loire, France. The owner, Vincent Girault, adopted organic and biodynamic agriculture in 1989, and hasn’t looked back since; he is confident that it gives the wine extra flavour, ripeness and colour, as well as being much better for the environment.
