About
This open-topped vegetable pie is ideal for vegetarians and meat eaters alike. Light, golden baked all butter pastry filled with a mixture of potato and onion with garlic, parsley and topped with grated cheese. Lovely served hot or cold, it’s a good alternative to a heavy meat-based pie.
Handmade by the team at Ben's Farm Shop kitchen on Riverford Farm. Guy’s brother Ben Watson, with his encyclopedic knowledge of food, is the inspiration behind the recipes. Ben’s team runs a busy production kitchen on our farm in Devon. We make everything by hand and put flavour first – if it doesn’t taste outstanding, we’ll keep working on it until it does.
How to prepare
Can be eaten hot or cold. If heating, sprinkle with a few drops of water and cover with foil (if you spread a little olive oil on the inside of the foil it will keep the pastry crisp). Place on a baking tray in a preheated oven at 180°C for 20-30 minutes until piping hot.
Storage
Keep in the fridge for up to 4 days and use before the date on the label, or freeze on the day of purchase.
