How to store Savoy cabbage
Keep in the fridge or a cool veg rack. It will last up to a fortnight.
How to cook Savoy cabbage
Discard any damaged outer leaves and the central core. To make the prep easier, roll up two or three outer leaves into a sausage shape and slice them together. Savoy is a robust variety, so is best boiled rather than steamed. Use plenty of water at a rolling boil and keep the lid off to help keep its dark green colour. Ideal in soups and stews or try stuffing with rice and minced beef or lamb.
Savoy cabbage season
In season from July to March. At its very best between October and February.
Organic cabbage farmer
We grow cabbages on all our Riverford farms. They’re a really underrated British brassica and thrive in our climate.
