The juice prevents cut fruit and veg from browning and can be used as a substitute to salt in dishes. The zest and peel contain pectin and can be used to help set jams and jellies. Grated zest can also be used to flavour cakes, biscuits, mousses, custards and sauces.
Roll a lemon between your hands for a couple of minutes before using to warm the fruit gently – you will be able to yield more juice.
Lemons can be kept in a cool room or the fridge for at least a week.
For a milder lemon flavour, simply rub a sugar cube over the surface of the fruit so that it absorbs the citrus oils and pop into your cooking mixture. Lemons are rich in Vitamin C and very low in calories. They can also be used for a wide variety of household uses – deodorising, bleaching, removing grease and stains and disinfecting. Lemon juice can lighten hair and the oil, when used in aromatherapy, has uplifting properties.
