Mass-grown cauliflower is pushed on with nitrogen for rapid growth, but mushy florets. Ours are different, grown slowly on mineral-rich soil, producing smaller, firmer caulis with exceptional flavour. Think cauliflower cheese and curries – and remember to cook the leaves too.

How to store cauliflower

Keep in the fridge – they can last up to a fortnight.

How to cook cauliflower

Roast (for the best flavour), boil, steam or stir fry – just don’t overcook it! For a really flavoursome side dish, cook chopped garlic, chilli and oregano gently in olive oil for 2 mins, then mix with cooked cauliflower and serve sprinkled with lemon juice. Or try frying gently in butter with almonds. If you’re making cauliflower cheese, try adding a dollop of mustard to the sauce. You can also use cauliflower cheese as an alternative topping for cottage pie.

We can grow cauliflower in the UK all year round, but you’ll see it in your box mainly from October to May.
