A salute to India, the warming combination of apple and spices creates a soup that's unusual and delectable. This is a good way to use up those less-than-perfect windfalls. Substitute the chicken stock for veg stock if you want a vegetarian recipe.

Ingredients

  • 1 onion
  • Butter for frying
  • ½ tsp turmeric
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp mustard powder
  • Pinch of cinnamon
  • Pinch of cayenne pepper
  • 3 tart apples, peeled, cored & roughly chopped
  • Chicken stock
  • Juice of ½ lemon
  • Salt & pepper

Method

  1. Sauté the onion in butter, then add the turmeric, ground cumin, ground coriander and mustard powder, plus the cinnamon and cayenne pepper.
  2. Add the apples. Cover with chicken stock and simmer for about 15 minutes until the apples are soft.
  3. Blend to a purée and season well, adding the lemon juice.
