Print Spinach with pomegranate

This dish has a beautiful, gem-studded appearance. A good way to cook the spinach is to sauté it with a little minced garlic, olive oil, salt and pepper. Serve as part of a mezze or with grilled fish.

Ingredients

  • 400g spinach
  • Seeds & juice of 1 pomegranate

Method

  1. Blanch the spinach in boiling water for 2 minutes. Drain, refresh and then squeeze out any excess moisture. Leave to cool.
  2. Dress cold spinach with pomegranate juice and seeds.
