A simple and luxuriant recipe for purple sprouting broccoli: a good way to enjoy the first crop of the season. This works as a vegetarian side with pretty much anything, or could be eaten as a starter on its own.

Ingredients

  • 500g purple sprouting broccoli, trimmed
  • 50g butter, melted
  • Juice & zest of ½ lemon, more to taste
  • 75g hazelnuts or almonds, toasted & chopped
  • Salt & pepper

Method

  1. Steam or boil broccoli for about 3 minutes, until just tender.
  2. Drain, place on a serving platter. Drizzle with the melted butter and  lemon juice and zest.
  3. Season with salt and pepper and sprinkle over the chopped nuts.
