Roasted cherry tomatoes caramelise and become lovely and sweet. A sprinkle of sea salt will bring out their sweetness even more. Serve as a side with summer chicken or fish dishes. For a vegetarian meal, this recipe's good with fried halloumi or corn fritters.

Ingredients

  • 200g cherry vine tomatoes
  • 2 tbsp olive oil

Method

  1. Preheat oven to 200°C/Gas 6.
  2. Drizzle cherry tomatoes with olive oil and roast for about 15 minutes, until their skins are beginning to burst.
