Print Pangrattato (garlic crumbs)

Pangrattato (literally 'grated bread') is called 'poor man's Parmesan', but it doesn't taste like second best. Toasted in garlic and oil, crispy breadcrumbs add a remarkable taste and texture to dishes.


  • 3-4 fat slices stale bread, crusts removed
  • Olive oil
  • 2-3 garlic cloves, peeled & finely chopped
  • Pinch of dried chilli flakes
  • 1 lemon, zested
  • Salt & pepper


  1. Blitz the bread in a food processor to coarse crumbs.
  2. Warm 2 tablespoons of oil in a frying pan, add the garlic and stir for a few seconds, then add the breadcrumbs.
  3. Fry over a medium heat for 4-5 minutes, until golden and crisp.
  4. Remove from the heat. Stir in chilli flakes, lemon zest and salt and pepper, all to taste.
