Print Chickpeas with red pepper

This is a very quick dish to make, and comes mainly from the store cupboard. It will serve 4 as part of a mezze style meal or 2 as an accompaniment to grilled fish or pork steaks. To turn it into a vegetarian main, try tossing with quinoa, crumbled feta and slices of avocado.

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 red pepper, deseeded & chopped
  • 1 tsp ground cumin
  • Small handful fresh coriander, chopped (if none available, use ½ tsp ground & add with the cumin)
  • 1 tin chickpeas, drained
  • 100ml hot veg stock
  • Salt & pepper

Method

  1. Heat the oil in a pan and gently fry the onion for 5 minutes or so until soft.
  2. Add the pepper and cumin, cook for a couple more minutes. Add the chopped fresh coriander, chickpeas and stock.
  3. Heat through. Season to taste. Serve warm or cold.
