Print Butter roasted turnips and potatoes

This easy dish of buttery roasted potatoes and turnips goes beautifully with chicken. You could substitute some of the veg for parsnips if you have them in your veg box, or throw in some unpeeled cloves of garlic or peeled shallots.

Ingredients

  • 500g potatoes, peeled & cut into wedges
  • 500g turnips, peeled & cut into wedges (if small, cut in half)
  • 2 tbsp olive oil
  • Bunch spring onions, finely sliced
  • 50g butter
  • Handful fresh parsley, chopped
  • Salt & pepper

Method

  1. Preheat oven to 180˚C/Gas 4.
  2. In a large pan of boiling salted water, cook the potatoes and turnips for 5 minutes.
  3. Drain and place in a baking dish or roasting tin. Toss with the olive oil and season well with salt and pepper. Roast for 30 minutes.
  4. Remove from the oven and layer over the spring onions. Drizzle over the butter and roast for another 10-15 minutes, until golden brown and tender. Sprinkle over the parsley to serve.
