Print Spinach and blue cheese pasta sauce

The adult's version of macaroni cheese, the strong flavours of spinach and blue cheese marry beautifully in this comforting vegetarian pasta recipe. It can be on your plate in less than twenty minutes and is especially good with fettucine.


  • 500g spinach, roughly chopped
  • 1 medium onion, finely diced
  • 2 tbsp olive oil
  • 1 garlic clove, crushed
  • 1 tbsp flour
  • 450ml milk
  • 100g blue cheese
  • Salt & pepper


  1. Steam the spinach for 5-10 minutes.
  2. Sauté the onion in hot oil with the crushed garlic for 5 minutes. Add the flour and cook for 1 minute.
  3. Gradually add the milk and stir until thickened. Simmer gently for 3 minutes.
  4. Crumble the cheese and add to the sauce. Stir in the spinach and season with the salt and pepper. Cook, stirring until the cheese has melted.
