Print Lemon onion sauce

This easy, zesty sauce goes very well with meaty grilled fish or chicken, and can also be used to dress a plate of veg.


  • 450g onions, chopped
  • 25g butter
  • Olive oil
  • Pared zest & juice of 1 lemon
  • Salt & pepper


  1. In a tightly covered pan, cook the onions in butter and a dash of olive oil with the pared zest for 30 minutes. Purée with the juice of the lemon and season.
