Print Purple haze salad

Take advantage of your colourful carrots with this simple side.


  • 2-3 large purple carrots
  • 1 lemon
  • Pinch ground cardamom
  • Pinch ground ginger
  • Pinch ground cinnamon
  • 50g feta or goat’s cheese
  • 30g pine nuts, lightly toasted
  • Small bunch flat leaf parsley, roughly chopped
  • Salt & pepper


  1. Wash and peel the carrots, use the peeler to peel the carrots into long ribbon like strips. Throw the strips in a bowl and season with salt, pepper and a generous squeeze of lemon juice.
  2. Add the spices, mix well and adjust the seasoning to your taste.
  3. Pile the carrots artfully on a plate. Crumble over the cheese and scatter with the pine nuts and parsley.
