Print Kachumber salad

This unfussy, punchy vegan side salad is popularly eaten in India alongside spicy dishes. It's also great on it's own as a healthy snack. It has many variations - you could grate instead of dicing, or add any of cucumber, carrots and beetroot. Other common additions are mint leaves and minced fresh chilli.

Ingredients

  • 200g tomatoes, diced
  • 1 medium onion, diced
  • 4 tbsp coriander, or parsley or mint, chopped
  • ½ tsp cumin, roasted & ground
  • ½ tsp cayenne pepper
  • 2 tbsp lemon juice or vinegar
  • ¾ tsp salt

Method

  1. Combine all the ingredients together in a bowl.
