Print Japanese carrot salad

This quick vegetarian recipe is one to have up your sleeve to serve with any Asian-style meal. It's also good with the addition of grated radishes (or Asian daikon radishes), and some toasted sesame seeds sprinkled on top.

Ingredients

  • 3 tbsp rice vinegar
  • 1 tbsp caster sugar
  • A thumb of fresh ginger, peeled & finely grated
  • 500g carrots, coarsely grated
  • Salt to taste

Method

  1. Combine rice vinegar, sugar and ginger. Pour over carrot and add salt to taste.
