Print Courgette salad with lemon and herbs

Thrown together in five minutes, this healthy, vegetarian side is one for the late summer when courgettes are on overload. Add in a handful of toasted almonds or pine nuts for a bit of crunch. Try this alongside creamy pasta or risotto; in a big bowl at a BBQ; or as a side to grilled fish.


  • Zest & juice of ½ lemon
  • 2 tbsp olive oil
  • ½ tbsp mint, chopped
  • ½ tbsp parsley, chopped
  • 4 courgettes, grated
  • 1 tsp poppy seeds
  • Salt & pepper


  1. In a bowl combine the lemon juice and zest, olive oil and herbs.
  2. Add the grated courgettes and poppy seeds and toss together to coat the courgettes.
  3. Season to taste.
