Print Chunky avocado and tomato salad with coriander and sweet chilli dressing

The key to this lovely summer salad is ripe tomatoes and avocados – don't try and make it without. Serve this as an accompaniment to chilli con carne or marinated fish, or just on its own for a light vegetarian lunch.

Ingredients

  • 2-3 ripe avocados
  • 500g tomatoes
  • ¼ cucumber
  • ½ red onion or 1 bunch of spring onions, chopped
  • 1 garlic clove, crushed
  • 1 tbsp sweet chilli sauce
  • 1 tbsp balsamic vinegar
  • 2 tbsp sunflower oil
  • 2 tbsp coriander, chopped
  • Juice of ½ lemon or lime
  • Salt & pepper

Method

  1. Cut the avocados, tomatoes and cucumber into chunky 2cm dice. Mix together in a bowl with the onion and season well.
  2. Mix all the remaining ingredients together and season well. Toss with the vegetables and serve.
