Both dark leafy veg loaded with nutrients, spinach and chard can often be substituted for each other in recipes, though chard takes slightly longer to cook. Wash them thoroughly to get rid of any grit. They team well with lamb, chilli, garlic, lemon and tomato.

Method

  1. Cook simply: Stir leaves into soups, stews or curries for a couple of minutes before the end of cooking. Use chopped, cooked spinach or chard leaves as a topping for pizza, along with olives and pine nuts.
  2. Fish pie base: Put wilted spinach or chard in the bottom of your pie dish, pour over a little cream and grating of fresh nutmeg, then add the fish mixture and mashed potato topping.
  3. Asian style: Shred a bag of chard leaves and finely chop the stalks if not too large. Stir fry in 2 tablespoons sunflower or groundnut oil, with a small piece of grated ginger, 2 cloves finely sliced garlic and a pinch of dried chilli flakes or a chopped fresh chilli. Toss with dark soy sauce and sesame oil. Sprinkle with toasted sesame seeds and serve.
