Delicate, buttery sautéed cucumbers go well with anything from a curry to barbecued meat and grilled white fish.
Ingredients
- 1 cucumber
- 1 tbsp butter
- Lemon juice
- Chopped herbs such as dill & parsley
Method
- Peel a cucumber, quarter it lengthways and remove the seeds. Chop the flesh into 2cm chunks. Melt the butter in a pan and toss the cucumber in it, stirring well.
- Cook gently for 5 minutes, then add lemon juice, salt and pepper to taste. Stir in the chopped herbs. Serve with fish.
