Print Spanish pork bruschetta

A delicious, easy lunch or supper


  • 400g minced pork
  • Olive oil
  • 3 onions, finely diced
  • 2 green peppers, finely diced
  • 2 red peppers, finely diced
  • 5 garlic cloves, finely chopped
  • 3 tsp ground fennel seeds
  • 2 tbsp tomato purée
  • 2 tbsp parsley, chopped
  • 1 tsp hot smoked paprika
  • Salt & pepper


  1. Brown the minced pork in a splash of olive oil. Remove the pork with a slotted spoon and, using the same pan and oil, fry the onionand green and red peppers until soft and beginning to brown. Add the garlic, ground fennel seed, tomato purée, chopped parsley and hot smoked paprika. Cook for another 5 minutes, stir in the pork and season. Serve on toasted sourdough.
