
Print Egyptian toasted sandwich
If you’ve had enough burgers, ragus and chillies, try a kind of Egyptian toasted sandwich or Hawawshi.
Ingredients
- 300g mince
- 1 garlic clove, diced
- 1 onion, diced
- 2 tomatoes, diced
- 2 red peppers, seeded & diced
- 1 tsp fresh mint, chopped
- 1 tsp fresh parsley, chopped
- ½ tsp chilli, chopped
- Pinch each ground cumin, coriander & cloves
- 4 fresh pitta breads
- Olive oil
- Pinch za'atar, dukkah or ras-el-hanout
Method
- Preheat oven to 200°C/Gas 6. Put your mince in a food processor with diced garlic, onion, tomato and peppers. Add the mint, chilli and parsley and a good pinch each of ground cumin, coriander and cloves. Pulse a couple of times.
- Spoon the filling into the breads, pinch shut, brush with oil on both sides and sprinkle with zaatar, dukkah or ras-el-hanout. Wrap in foil/parchment and bake for 15 minutes, turn over and cook for another 10 minutes.
