Spinach with yoghurt

Starter Serves 3 10 min
Nutritious, simple and quick to cook. The combination of earthy spinach and cooling yoghurt is lovely with curry and dal, or as part of a mezze spread.


  • 1 onion, chopped
  • 2 tbsp sunflower oil
  • 225g cooked spinach, roughly chopped
  • 600ml Greek-style yoghurt
  • 1 garlic clove, crushed
  • powdered sumac or sweet paprika
  • dried mint, to garnish
  • salt and pepper

Cooking time: 5 min
  • Step 1

    Sauté the onion in the oil until browned. Cool slightly.
  • Step 2

    Mix with the spinach, yoghurt, garlic and seasoning. Spoon into a serving bowl and chill until nearly ready to serve.
  • Step 3

    Decorate the surface with a scattering of sumac or sweet paprika, and dried mint.
