Slow cooked sausage meat sauce
Ingredients
- 500g minced pork
- 1 tsp ground fennel seeds
- 2 tbsp olive oil
- 2 red onions, chopped
- 2 garlic cloves, finely chopped
- good pinch dried chillies (to taste)
- 2 bay leaves
- 250ml red wine
- 2 tins chopped tomatoes, liquid drained away
- 150ml crème fraîche
- 120g Parmesan, grated
- salt and pepper

Step 1
Season the pork with the teaspoon of ground fennel and a generous sprinkle of salt and pepepr. -
Step 2
Heat the olive oil in a pan and add the seasoned pork. Fry and stir for a few minutes until evenly browned. -
Step 3
Add the onion, garlic, dried chillies and bay leaves. Cook for about half an hour until the onions begin to brown and the mixture is fairly dry. -
Step 4
Add the wine, turn up the heat and cook until most of the wine has evaporated. Add the drained chopped tomatoes and cook at a bare simmer until you have a nice thick sauce (it will take an hour or more). -
Step 5
Add the crème fraiche and Parmesan and leave for 5 minutes to get acquainted.
