Simple shallot salad

A fast and simple salad with a raw punch and crunch. It is often said that parsley can be chewed to combat onion or garlic breath; here you have the cause and the cure in one dish. Great with pickled or smoked fish or as a side to any hot dish.

Ingredients

  • handful fresh parsley, chopped
  • small sprig mint, chopped
  • 4 shallots, finely sliced
  • 1 tbsp rinsed capers, chopped
  • zest and juice of 1 lemon
  • salt

Method

Prep time: 5 min
  • Step 1

    Throw the herbs, onions and capers together with a tablespoon of olive oil and a pinch of salt.
  • Step 2

    Add a sprinkle of zest and a splash of lemon juice, adding more as your taste decides.
