Roasted miso edamame beans
Ingredients
- 400g edamame beans in their pods
- 2 tbsp untoasted sesame oil
- 2 tbsp brown rice miso
- 1 tbsp tamari or soy sauce
- 1 tbsp mirin or rice wine vinegar
- 1 garlic clove, finely chopped
- ½ tbsp chilli sauce – optional

Step 1
Preheat your oven to 200˚C. Make sure the pods have been removed from their stalks and throw them into a large roasting tray with the sesame oil. Pop them into the oven to roast for 10 mins. -
Step 2
Meanwhile mix the miso, tamari, mirin and garlic together in a small bowl to make a paste. Add the chilli sauce too if you want some heat. -
Step 3
Remove the beans from the oven and stir in the miso paste until they are thoroughly coated. Return to the oven for a final 5 minutes until the sauce has darkened and the beans inside are tender. -
Step 4
Transfer to a bowl and serve warm. Use your fingers to pop them from the pods to snack on.
