Purple haze salad

Take advantage of your colourful carrots with this simple side.


  • 2-3 large purple carrots
  • 1 lemon
  • pinch ground cardamom
  • pinch ground ginger
  • pinch ground cinnamon
  • 50g feta or goat's cheese
  • 30g pine nuts, lightly toasted
  • small bunch flat leaf parsley, roughly chopped
  • salt and pepper


Prep time: 10 min
  • Step 1

    Wash and peel the carrots, use the peeler to peel the carrots into long ribbon like strips. Throw the strips in a bowl and season with salt, pepper and a generous squeeze of lemon juice.
  • Step 2

    Add the spices, mix well and adjust the seasoning to your taste.
  • Step 3

    Pile the carrots artfully on a plate. Crumble over the cheese and scatter with the pine nuts and parsley.
