Chickpeas with red pepper

Side Serves 4 20 min
This is a very quick dish to make, and comes mainly from the store cupboard. It will serve 4 as part of a mezze style meal or 2 as an accompaniment to grilled fish or pork steaks. To turn it into a vegetarian main, try tossing with quinoa, crumbled feta and slices of avocado.


  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 red pepper, deseeded and chopped
  • 1 tsp ground cumin
  • small handful fresh coriander, chopped (if none available, use ½ tsp ground and add with the cumin)
  • 1 tin chickpeas, drained
  • 100ml hot veg stock
  • salt and pepper

Cooking time: 10 min
  • Step 1

    Heat the oil in a pan and gently fry the onion for 5 minutes or so until soft.
  • Step 2

    Add the pepper and cumin, cook for a couple more minutes. Add the chopped fresh coriander, chickpeas and stock.
  • Step 3

    Heat through. Season to taste. Serve warm or cold.
