Chickpeas with red pepper
Ingredients
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 1 red pepper, deseeded and chopped
- 1 tsp ground cumin
- small handful fresh coriander, chopped (if none available, use ½ tsp ground and add with the cumin)
- 1 tin chickpeas, drained
- 100ml hot veg stock
- salt and pepper

Step 1
Heat the oil in a pan and gently fry the onion for 5 minutes or so until soft. -
Step 2
Add the pepper and cumin, cook for a couple more minutes. Add the chopped fresh coriander, chickpeas and stock. -
Step 3
Heat through. Season to taste. Serve warm or cold.
