Butter roasted turnips and potatoes
Ingredients
- 500g potatoes, peeled and cut into wedges
- 500g turnips, peeled and cut into wedges (if small, cut in half)
- 2 tbsp olive oil
- bunch spring onions, finely sliced
- 50g butter
- handful fresh parsley, chopped
- salt and pepper

Step 1
Preheat oven to 180°C/Gas 4. -
Step 2
In a large pan of boiling salted water, cook the potatoes and turnips for 5 minutes. -
Step 3
Drain and place in a baking dish or roasting tin. Toss with the olive oil and season well with salt and pepper. Roast for 30 minutes. -
Step 4
Remove from the oven and layer over the spring onions. Drizzle over the butter and roast for another 10-15 minutes, until golden brown and tender. Sprinkle over the parsley to serve.
