Nutritious, versatile and easy to cook, quinoa is a true store cupboard staple. This organic wholegrain quinoa, grown in Suffolk, is something special. British quinoa pioneer Peter Fair started growing it in the 1980s, and has worked with Hodmedod’s to find the tastiest types for their growers. They settled on the Fairking variety; wonderfully light and nutty, it’s a very deserving Delicious award winner.


Rinse, cover with 1½-2 parts water or stock for every 1 part quinoa, bring to the boil, then simmer on a very low heat for 15 mins. The grains will absorb the water and swell to 2-3 times their original size. Fluff the grains apart with a fork.


Store in a cool, dry place out of direct sunlight. Cooked quinoa should be stored in the fridge and eaten within a few days.
