Top and tail (or just top), and blanch in boiling salted water for 3-4 mins, or a little longer for less squeak and bite.
Once briefly boiled, French beans can be dressed up with all sorts of flavours. Salad Ni?oise is always a winner - add some or all of anchovies, hard-boiled eggs, new potatoes, tuna, lettuce, capers and olives. For something simpler, simply turn French beans in a pan of melted butter with a cloud of parmesan on top, or toss with crispy pancetta and shredded sage.
Will keep for around a week at room temperature. Delivered fresh from the farm, so wash before eating.
