A note from our cooks

This recipe will take 60 mins. Boulangère potatoes are very moreish; the potatoes are cooked down to an unctuous mixture with the thyme and onion. It can be made with just stock, or a little milk, but we’ve added a dash of cream from our dairy for extra richness. The lamb is topped with a herb and garlic salsa, with a side of seasonal greens (this week, it's spring greens rather than kale, pictured).
