How to cook parsnips
Roast with potatoes and beetroot alongside a roast, or slice very thinly and fry until golden to make crisps. For a new take on roasted parsnips, parboil them for a few mins, then roll in flour and parmesan before roasting. They also make beautiful parsnip purée – boil until tender, then mash with butter and cream until really smooth.
Our season runs from November to April. They’re at their very best between December and February.
