A note from our cook

Swede is a much underrated vegetable; it’s more versatile than you think. This bake makes a great comforting dish, with leek and a little tartness from apple, topped with toasted hazelnuts. It can be made in advance and reheated, and freezes well, too. This dish is suitable for home freezing. Freeze it in a suitable container, as soon as possible after cooking and cooling. Eat within one month. Defrost in the fridge, and reheat thoroughly before eating.
