This recipe will take 30 mins. Quick pickles are a vibrant way to liven up dishes. They can be kept for a couple of days or so in the fridge, where the flavours will mellow a little. We’ve used onion and mini cucumber here, to pair with marinated tofu on a teriyaki sauce, stir-fried with ribbons of colourful veg and served with jasmine rice and a smattering of sea salad.
