Introducing…..Buffalomi! Like a halloumi cheese, but made in the UK with buffalo milk, it has the same tangy flavour with a deliciously creamy texture. Frying buffalomi gives it a golden crust and a meltingly squidgy centre; its salty tang adds a great flavour to these filled tortillas with spiced peppers and onions, with mixed salad leaves and a drizzle of yogurt.
