Squash & Carlin Pea Tagine with Pomegranate

A note from our cook

A hearty autumn warmer, with squash, aromatic spices, Carlin peas (a traditional British variety), and sweet pomegranate. The pomegranates only have a short season, so it's great to be making use of their jewel-like seeds. Tangy Wootton white sheep’s cheese, a British feta, finishes the dish off nicely, along with fresh herbs and lemon. This dish is suitable for home freezing. Freeze it in a suitable container, as soon as possible after cooking and cooling. Eat within one month. Defrost in the fridge, and reheat thoroughly before eating.
