A note from our cook

Lasagne make a great batch cook; easily portionable, can be made ahead and reheated, or frozen if you want to get ahead, or if you are cooking for less than four people and need to save some. This easy vegetarian version has fresh and dried mushrooms for added umami (savoury) note, with lentils, passata, spinach and a cheese sauce to envelop the pasta. Yummy and moreish, this is a simple solution to mealtimes. This dish is suitable for home freezing. Freeze it in a suitable container, as soon as possible after cooking and cooling. Eat within one month. Defrost in the fridge, and reheat thoroughly before eating.
