This recipe will take 30 mins. The rainbow-coloured slaw in this dish adds a flash of colour and texture to the softer mushroom rice, which is packed with umami (savoury) flavour from the fungi and teriyaki sauce and topped with crunchy cashews. Our red cabbages vary in size; if you have leftovers, it can be shredded and used in stir-fries, slow braised with star anise and red wine, or see our website for more ideas.
