A note from our cook

Pollock is a delicate white fish, full of great nutrients. Ours is sustainably line caught using small day boats only. We're not messing about too much with it here, pairing it with citrussy sorrel, a much underused herb that we grow on the farm, with spring peas and a creamy risotto rice.
