About these special citrus

Meet the finger lime: long enjoyed by Aboriginal Australians, they are unlike any citrus you've eaten before. Cut open these unprepossessing green fingers, and squeeze - out will pour a heap of tiny, tangy jewels.

Sometimes described as 'lime caviar', these little pearls burst in the mouth, unleashing their zesty juice and a wave of fragrant sweet-sour flavour. They're a rare treat, and prized by chefs - try them while you can!

Spanish citrus expert Amadora Gahona and her family grow several different varieties of finger lime for us throughout the season, with different nuances of shape, colour and flavour. The season kicks off with the wonderfully named Flavourly Green, an egg-shaped variety with a mild, lemony taste and distinctive aroma.

How to prepare

Finger limes don’t need cooking or any prep. Just halve the fruit, squeeze out the pearls, and sprinkle them over all sorts of dishes for a wonderfully fresh, zesty garnish. They are particularly good with seafood, such as ceviche, fish tacos or steamed fish, but will also add a brilliant citrus lift to vegetables, or even desserts; their sharpness can provide a satisfying contrast with sweet summer fruits.

Finger lime grower José particularly recommends adding them to mayonnaise for a burst of freshness as you eat.

Storage

Finger limes can be kept in a cool room or the fridge for at least a week.

Class

Our limes are sold as class 2. This means that they might not look cosmetically perfect, but they are grown for the very best flavour. (We have to tell you this to satisfy some EU rules).

    Gospa Citrus is run by Amadora Gahona and her children in Mairena del Alcor, near Seville – a region famed for its outstanding citrus fruits. There have been orange groves on their 60-hectare farm since 1867, and they were the very first orange farm in Andalucia to be awarded organic status.
