Comice pears (properly Doyenné du Comice) are a French heritage variety that keen pear-eaters have been raving about since the mid-19th century. Plump bottomed and blushing red, they exceptionally sweet, with a mellow, earthy underlying flavour. Best to enjoy them raw, straight from your hand – the soft, juicy flesh won’t stand up well to cooking. Fresh slices will also do very nicely in salads or with cheese.
