Known as ‘Mexican corn truffle’, this little-known delicacy is prized in parts of South America. It is the product of a fungus that affects sweetcorn kernels, and its pungent, earthy flavour is traditionally used in quesadillas.

The bag will contain 3 huitlacoche cobs and Guy’s recipe for huitlacoche quesadillas and huitlacoche risotto.

where did it come from?

As organic farmers who want to farm in balance with nature, we don’t routinely spray our veg with chemical fungicides and herbicides. This does mean that we are at risk of losing crops, but on this occasion we have something novel, interesting and flavourful to sell!
