Store & prepare
Stored in the fridge, daikon will keep for about a week.. To prepare it, cut off any leaves and peel it.
Cube and roast it or add to soups, curries or stews. Thinly slice or cut into matchsticks and add to stir fries. Shred it raw into coleslaw. Or for a fresh and simple salad, toss finely sliced rings of daikon with good olive oil, lemon juice and chopped parsley and season with salt and pepper. Otherwise you could try making a miso paste broth and adding thinly sliced veg along with the daikon.
