Our stilton cheese comes from Luke Chapman at Cropwell Bishop Creamery in the Vale of Belvoir, eight miles from Nottingham.
Blue stilton matures in 8-10 weeks so the difficulty they face at Cropwell Bishop is making the right amount of cheese whilst making sure it has a good flavour profile and age, which is even more difficult around Christmas time.
Luke started working with cheese in 1983 and has been working at Cropwell Bishop Creamery since 2008. The business was bought by the Skailes family in 1950 and is now third generation family run. They began producing organic blue stilton around 15 years ago.
