It has a distinctly spiced flavour that comes from our 10-day marinade of saltpetre, brown sugar, salt, black peppercorns, juniper and crushed allspice berries. Just cut it thinly like pastrami and enjoy. It’s good for a Boxing Day spread with pickles, or in a chunky sandwich. Serves 4-6.

This product has been previously frozen and is not suitable for home freezing.

Keep in the fridge, below 5°C, and use by the date on the label.

Serve sliced thinly across the grain of the meat.

The beef comes from our producer group of small-scale organic farmers, who rear their animals to some of the highest welfare standards around. They are grass fed and enjoy an outdoor existence, reaching maturity naturally.
